Haricots verts are also known as ‘French beans’ (‘haricot’ meaning ‘bean’ and ‘vert’ meaning ‘green’). It looks like an ordinary butter bean, but haricots verts are somewhat thinner and straighter. It’s more of a crispy, crunchy bean.

PREPARATION

Haricots verts can be stored in the fridge for 2-3 days. The beans should be fresh, green, undamaged and not limp when purchased. Wash the beans and remove the stalk. Haricots verts are not suitable for consuming raw, as the raw beans contain toxins. Boiling the beans will remove these toxins. The beans can also be steamed or blanched for a crunchy taste, or stir-fried or grilled for an intense flavour.
