The eddoe looks like a coconut on the outside, but tastes like an ordinary potato, with a nutty accent. Eddoes are brimming with starch and can be eaten boiled or baked.

PREPARATION

Wear rubber gloves when processing the eddoe. The hairy outer layer must be removed carefully, as the skin can become irritated by the eddoe’s juices. The poisonous substances are destroyed during the cooking process. The eddoe can subsequently be fried, baked, roasted, boiled or steamed..
