ENOKI

ABOUT

Enoki is a long, thin, white mushroom with a musty smell, but a nutty flavour. The mushroom consists of bundles of white velvety stalks with small hats. Enoki grows in the dark and can sometimes take on some spectacular shapes.

PREPARATION

The mushroom is often used in salads and soups. The enoki will become tough if it’s cooked for too long. Cut a couple of centimetres from the bottom and carefully separate the stalks. Fresh enoki can be used raw in salads. Enoki can be stored in the fridge for a few days.
