KARELA

ABOUT

The karela is also known as sopropo. It’s an oblong fruit which is eaten when the fruit is green and unripe. The flesh is the same as a cucumber’s. You can only eat the karela’s skin and flesh. The flavour will turn stronger and bitterer as the fruit turns more yellow. The karela can be eaten in its entirety and is often used as an ingredient for soup and wok dishes.

PREPARATION

Wash the karela and cut the fruit lengthways down the centre. Remove the seeds and cut the karela into thin strips. The karela can be stored in the fridge for a few weeks.
