Mangetout (Legumes) are clear green, flat and crunchy. Both the pod and the peas can be eaten and have a sweet taste. Legumes are rich in vitamins and minerals. They can’t be eaten raw, as they naturally contain a poisonous substance, which is neutralised by boiling or blanching.

PREPARATION

Buy legumes which look fresh green without any brown or black spots. Wash the legumes before preparing them. Legumes can be stored in the fridge in a pierced bag for several days.
