ABOUT

The red pepper is also known as the ,Spanish pepper, and is ripened more than the green variant and therefore much spicier. The spiciest parts are the seeds. Spiciness: approximately 20.000 to 30.000 Scoville units.

PREPARATION

Buy shiny, unblemished peppers with a fresh and undamaged stalk. Wash the peppers before use and remove the stalk. If the pepper isn’t being cooked in its entirety, half the pepper in length with a knife and scrape out the seeds. Cut the pepper into slices for further use. The red pepper can be stored in the fridge for up to a week.
