The scorzonera is a root which is eaten like a vegetable. The root has a brown stem and rough skin. Its creamy flavour is comparable to an asparagus. The scorzonera can instantly be eaten or cooked once it has been peeled and cut. The scorzonera is often also used in soups.

PREPARATION

Buy firm roots. Scorzonera is best when peeled before use, using a peeler or an asparagus peeler. The root can be eaten raw, but can also be boiled and fried.
