SEA LAVENDER

ABOUT

Sea lavender is a sea vegetable with a salty flavour. The plant has fleshy leaves and purple, pink or white flowers which look like daisies. The leaves can be a little white at times. Sea lavender is delicious with fish dishes and can be eaten raw and cooked.

PREPARATION

Quickly rinse the sea lavender in a bowl of cold water and immediately remove it from the water (sea lavender is used to salt water and doesn’t like ‘sweet’ tap water). Shake any excess water – in a sieve or colander – off the sea lavender or carefully squeeze it out. Prepare the sea lavender without salt: the vegetable naturally already contains plenty of salt.
