Sugar snaps are a little like legumes, but they are much rounder and taste sweeter. Sugar snaps aren’t yet ripe when they are harvested. The seeds are still in the shell, but this is exactly what results in the delicious taste. The sugar snaps will remain crunchy and fresh green during the preparation. Sugar snaps are suitable for boiling, wokking and stir-frying and can also be used in salads.

PREPARATION

Buy crunchy, smooth and shiny sugar snaps which are a fresh green. Wash the sugar snaps, cut the top off with a sharp knife and instantly remove the hard fleshy thread which runs along the seam of the shell. Also cut off the very bottom of the shell and subsequently take the thread off the other side of the shell. Sugar snaps can be stored in the fridge for several days.
