ABOUT

The topinambour is also known as earth apple or ‘Jerusalem artichoke’. The shape will put you in mind of a knobbly potato or tuberous root. It tastes a little like an artichoke with the sweetness of scorzonera. There are light and dark varieties, but the lighter ones taste best. They contain very few calories.

PREPARATION

Peel the topinambour with a knife or peeler. Cut it into slices and place these in cold water in order to avoid discolouration. Topinambour is delicious raw in salads and can also be boiled, steamed or baked.
